Bikini

Makes enough for 10 people

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Premix (makes 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Method

Making the Citrus Syrup: Place the listed ingredients inside a pot, bring to a light boil, stirring so the sugar melts. After that, remove from the burner and leave to cool fully. Pour into an sealable bottle, close it and refrigerate it chilled, where it will keep for about a month.

For the Batch Mix: Combine every spirits and syrup into a big jug, let it rest for one hour, then filter it preferably using a fine cloth, to ensure it's perfectly clear.

To serve: Add 85ml of your cocktail base into your mixing glass packed with ice, gently stirring carefully for one minute to cool it down. Pour into a chilled martini glass or a similar vessel, garnish with the cranberries adding the final touch with a light spray with the mandarin essence over the drink.
